PULLED PORK SANDWICHES WITH SUGAR-FREE FRIED TOMATO FROM TIERRA PALACIEGA AND PICKLED RED ONION

Ingredients:
- 1.2 kg pork head
- 1 jar of Tierra Palaciega sugar-free fried tomato
- 8 slices of bread
- 2 tablespoons sweet paprika
- 1 tablespoon ground cumin
- 1 tablespoon mustard
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon black pepper
- 200 ml beef stock
- 200 ml beer or white wine
- 2 tablespoons BBQ spices or similar
- Olive oil
- 2 red onions
- 1 lime
Preparation:
- Cut the meat into pieces and mix with all the spices. Cover and refrigerate for 6 to 12 hours.In a pressure cooker, add 2–3 tablespoons of olive oil and sear the meat on all sides for several minutes. Add the beer, stock, and vinegar.
- Close the lid and cook over medium-high heat until steam escapes from the valve, then reduce to low heat and cook for 70 minutes.
Allow to rest, then shred the meat using two forks in some of its cooking juices. Mix with the Tierra Palaciega fried tomato and heat again until everything is well combined and the texture is rich and not watery. - Thinly slice the red onion into fine julienne. Place in a bowl with the lime juice and a pinch of salt, mix well, and let it marinate.
- Toast the bread slices, add the pulled pork, top with the pickled onion, and close the sandwiches
